Lately, DH hasn't been eating a lot of bread or carbs so it's challenged me to work with some new recipes which is always good. Last night I made these and they came out so yummy. Sorry I didn't get a picture, but I know you will enjoy. If you or your guests are allergic to peanuts just leave em out.
Spicy Chicken Peanut Wraps
INGREDIENTS:
2 boneless skinless chicken breasts
olive oil
3 cups shredded green cabbage
1 cup shredded peeled carrot
1/4 cup chopped green onion, white and light green parts only
1/4 cup chopped dry roasted unsalted peanuts
Juice of 1/2 lime
1 1/2 tsp low sodium soy sauce
2 tsp rice vinegar
1 tsp honey
1 tsp Sriracha hot sauce
1/2 tsp sesame oil
Wraps - either use tortillas, lettuce, or anything that you like which will act as a wrapper
I usually marinate my chicken in a combo soy sauce lemon (or lime) juice and a pinch of pepper for about an hour before cooking.
INSTRUCTIONS:
One - Heat a grill pan on medium high heat. Add marinated chicken and cook to just opaque in the center, set aside until cool enough to handle.
Two: Meanwhile, in a large bowl, combine cabbage, carrot and green onions.
Three: In a small bowl whisk lime juice, soy sauce, vinegar, honey, Sriracha and sesame oil.
Four: Shred chicken with two forks
Five: Assemble. I used lettuce leaves for this and let my guests make their own. You could easily use tortillas or any other leafy veggie of choice as a wrap.
Choose the 'roll up' add the chicken first, top with carrot/cabbage mixture, and a little of the sauce, sprinkle with peanuts, roll up and eat.
